How To Make Cracker Candy…Post #2!!

 

 

Well!!! I know that my last post was also for Cracker Candy…but, it just did not turn out correctly! The video says “not available” even though it worked on the original post. Cracker Candy is really  fun to make and equally as delicious!

I was trying to complete a “Press This” and the process just did not work for me! So…this proves that I am totally confused tonight and evidently do not know what I am doing!!  In order to redeem myself…the video is shown above and the recipe is below!

CRACKER CANDY

 

Directions:

***Pre-heat the oven to 350 degrees and line a cookie sheet with aluminum foil. Spray the foil with non-stick cooking spray. Next, place crackers from one tube of Saltines in neat rows on the cookie sheet.

***Now for the tasty part!

***Melt 1 cup or 2 sticks of butter in a saucepan on low heat. When the butter is melted, mix in 1 cup and 2-3 tablespoons of brown sugar and turn the heat to medium. Continue stirring until the mixture begins to boil. Allow it to boil for 3 minutes.

***Pour the mixture over crackers, being sure to fully coat every bit of the salty surface. Use a rubber spatula to spread evenly and then put the tray in the oven to bake for just 5 minutes.

***You’re not done yet. The sweet goodness keeps getting better and better!

***Remove the pan from the oven, and pour one bag of chocolate chips over the bubbling caramel sauce. Cover the pan with aluminum foil for 3 minutes so the chocolate melts. Use a rubber spatula to spread the chocolate evenly.

***If nuts are to your liking, top the Cracker Candy with your favorites.

***In the final step, cover the pan once more with aluminum foil and freeze for 20 minutes. Break up the pieces and try not to eat the whole batch in one sitting!

J. D. Salinger wrote about the brass ring and a carousel (merry-go-round) in his 1951 novel…

 

The Catcher in the Rye

 

Carousels typically had a small brass or iron ring that was located close to the edge of the revolving ride. The ring was attached to a dispenser and could be grabbed by a carousel rider. On most carousels, there was just one valuable brass ring. The brass ring could then be exchanged for a prize such as a free ride or a perhaps a stuffed animal.

Therefore…the term “grab the brass ring” became a popular phrase. The phrase was also used in the late 19th century. Even than, when most people heard “grabbing the brass ring”, they believed that the words meant to go out for the very best possible solution for any situation…to live a full and successful life without fear.

In Catcher in the Rye, Salinger evidently was under assumption that “grabbing the brass ring” represented a hope for a bright future and possibly the dream for a bright future. He insinuated that to grab a brass ring might be dangerous and that people would be taking a chance to try to get it. Many adults might be afraid to put out the effort to “grab the brass ring”. Would you be afraid?

 

Salinger asserted that children would most assuredly want to take a chance on grabbing the ring…without fear and that they would be anxious to take on the challenge. An interpretation of Salinger’s words…

 

Adults must allow children to try for the brass ring…whatever the results might be. Taking chances is an important part of life and more directly…an  important part of growing up. Do you agree?

Monday Pictures…Our East Texas Farm. Just a Trace of Sunshine!

When we were at our farm this past weekend, I thought that it would be fun to take some “beginning of the summer” pictures to place on my blog. Not really a good idea at all!

 

SUN! GREAT!

 

As soon as I got out the door ready with my camera…

 

HARDLY ANY SUN AT ALL!

 

This happened time after time. 

When I heard thunder in the distance, I went in the house and had a snack or three or four. So frustrated! As it turned out, a tornado hit about 35 miles away. The clouds certainly don’t look serious in any of the pictures. Texas weather can be very deceiving!

Looking For A Cricket…I Guess. I Hope.

I know for sure that summer has made it’s arrival…and it is not even June 1st. Yikes! Does that mean that the 102 degree weather is just around the corner? If so, I need to leave Texas until September.  I am thinking that Alaska would be nice.

 

The real reason that I may leave for Alaska…I have seen my first lizard of the summer! Staring at me from it’s hiding place on a tree. Waiting to chase me across the yard. Does the lizard in the tree want to catch a cricket…or me? 

 

My encounter with the lizard in the tree occurred as I was getting into my car. In one of the trees close to the driveway, I saw what looked like a stick moving down the tree trunk. Slowly moving. This behavior is quite abnormal for me…I walked over and took pictures of the lizard. The lizard immediately was frozen in place. Turns out the lizard was scared of me…imagine that! That lizard is bound to jump on my arm next week.

Honey and Spice Pork

Ingredients:

1/2 to 3/4 pound pork tenderloin

sea salt and ground black pepper (amount to your liking)

1/4 cup honey

3 tablespoons Dijon or Cajun/Creole-style mustard

1/3 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

6 to 8 small new potatoes

2 carrots, sliced in coins

15 to 20 green beans, trimmed or 2 cups frozen

Directions:

Preheat the oven to 450 degrees. Spray the inside of a cast iron Dutch Oven and lid with canola oil. Put the pork in the pot and lightly season with salt and pepper. In a small bowl, mix together the honey, mustard, ginger, cinnamon and cloves and pour over the pork. Slice the potatoes in half and add to the pot, then scatter the carrots and green beans over the potatoes. Cover and bake for 45 minutes. Serve immediately!

The Option To Survive Despite Trepidation.

Fear and struggles in life can leave a person empty. No doubt about it. Sometimes, the smallest struggle can seem monumental. Sometimes, the smallest fear can seem monumental. We have all felt this way. Worry about small happenings can border on behavior that considers only ourselves. In light of recent occurrences in our world, I think that we need to broaden our scope.

Take the time to look at the big picture. Think of a way to help someone in need. Most likely…there are families in your own town that are struggling to survive.

Charm School was an important class for twelve and thirteen year old girls in my hometown. We grew up knowing that Charm School was most likely going to be a part of our middle school years. The class was not associated with our regular school classes at all. Charm School was taught so that we would know how to make a good impression on others…to know what is right and what is wrong…to grow up to be “proper”.

 

Now I know that many people needed and still need to learn how to be “proper”!

 

Charm School was just like taking tap dance or piano lessons. Only in Charm School, we were expected to be total young ladies at all times…not so easy when you are still playing baseball with all of the boys in the neighborhood! Plus…playing in the creek…the ultimate un-ladylike place in town.

Poor, poor teacher…she had her work cut out for her with our group! The same lady had been teaching the class for years and she was the epitome of decorum. The teacher gave us a quote on the first night of our class and we repeated it every week. It happened to be a favorite quote that my mother told me many times from before I even started elementary school. She must have thought that I might need some assistance in the charm area someday! I had a big brother so I was going to stand up for myself…no matter what!

 

So…THE QUOTE helped!

Fourth Grade four

Funny how you can remember certain moments in your childhood just like they were yesterday. I remember my entire Fourth Grade year at Pinewood Park Elementary in Longview, Texas. In my mind, I can see the classroom on the first day of school and my name in cursive on my desk.

I know who sat beside me (Jimmy) and who was in my reading group. I still know my friends and what has happened in their lives…Kathy, Barbara, Grace Anne, Georgia and so many more…some in my class and some in another class. I can still see my mother helping at the Halloween party and the ghost cookies that she made. I remember that I got to help put up the flag every day. I still know how to fold the flag and the rules to follow. I remember so very much.
